Moromi | Rice Koji

Fine rice koji created with medium grain sushi grade rice and select Japanese tane koji. Our tane koji has been selected for its high amylase production and pure white color. This type of koji has been used for centuries to produce amazake, sake and sweet white - shiro miso. The aroma is amazing with the memorable earthy and floral notes of beautiful sweet koji. The koji is delicately dehydrated at low temperature.
